It is possible to use fresh bread with this recipe but fresh bread is more likely to stick to the pan and be a little less crispy. For those with gluten sensitivities, breads made with sprouted grains can be used. Sprouted grain breads generally contain less gluten and are often much easier to digest for those with gluten sensitivities. Vegan French Toast Recipe

Things You’ll Need

A skillet (preferably a cast iron skillet)
A food processor or hand blender
Rubber spatula
Measuring cups and spoons
1 large plate
Several pieces of bread
Ingredients for Vegan French Toast: Makes 6 to 8 pieces

1 349 g package of silken tofu
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
a pinch of salt
1/4 cup vanilla soy or almond milk
1 to 2 teaspoons vanilla
2 tablespoons maple syrup
How to Make Vegan French Toast Mix

Combine all ingredients in food processor and mix.
Let stand for 5 to 10 minutes. The long it stands the more the tofu will absorb the flavors.
Heat cast iron skillet and then add oil to it.
Pour french toast mix onto a large plate.
Dip both sides of bread into mix on the plate until covered, using the edge of the plate to scrape off excess french toast mix.
Place battered bread in hot skillet.
Cook until golden brown on both sides (3 to 5 minutes).
To make the toast crispier, place in an oven at 400° F for a few minutes.

What to Put on Vegan French Toast

Serve smothered in almond butter or your favorite kind of nut butter, a few tablespoons of hemp hearts, and a dollop or two of maple syrup. Also good with fresh fruit, jam, or plain.
