Spinach soup

Spinach soup is vibrantly healthy and nutritious. The soup retains the green color which means the freshness and nutrients of spinach will also remain intact.

Ingredients

  • 2 cups tender spinach leaves 
  • 1 carrot
  • 1 potato
  • 1 onion 
  • 4 garlic pods 
  • pepper 
  • 2 teaspoon oil 
  • sugar 
  • 2 cups vegetable stock 
  • Salt (to taste)

Method of Preparation

  • Begin by peeling the carrot, and potato, wash them thoroughly and finely chop them into small dice.
  • Add two cups of water to a cooking pot, add carrot and potato pieces to the pan and cook over medium heat. 
  • Use a toothpick or knife to slice through the vegetables just to ensure they are cooked. 
  • Remove the vegetables once cooked and place them in a separate bowl. Add the washed spinach leaves to the boiling water and cook for five minutes. 
  • Remove the spinach after 5 minutes and rinse it in cold water. 
  • Add the cooked potatoes, carrot along with spinach and grind finely. Add vegetable stock in between to achieve a puree consistency. 
  • Use a sew to separate the puree and the stock.
  • Heat the pan, add oil, chopped garlic, and fry till it turns golden. 
  • Add a spoonful of sugar, chopped onion, and fry well. 
  • All these will quickly distill in spinach juice; as per your preference add pepper powder, salt to taste and boil well. 
  • Add cream or butter to get a thick/soupy consistency.
  • That’s it your hot soup is ready to serve.

Broccoli Almond Soup

This wholesome soup is packed with nutrients and can be served with pasta, garlic bread, and much more. So, let’s get started.

 Ingredients

  • 1 whole Broccoli
  • 2 onion (finely chopped)
  • 6 garlic cloves (finely chopped)
  • 16 Almonds
  • 2 tablespoon oil 
  • 1 tablespoon butter 
  • 1 teaspoon Milk powder 
  • salt (to taste)

Preparation

  • Chop the broccoli into small pieces
  • Heat a pan, add butter and oil. 
  • As soon as the butter melts, add garlic and fry until the garlic releases its green flavor.
  • Then add onion pieces and let it simmer. 
  • Now add almonds, broccoli and cook till the color changes. 
  • After cooking, cool and grind the ingredients into a paste. 
  • Put this paste in another pan and boil till all the water boils. 
  • Now add milk and simmer for another two minutes, garnish with pepper powder and you are ready to eat.
